I am ready to list my item to sell on ebay, but I don't want to use pay pal. I would like it to say pay upon pick up.
How do I change this.

You cannot.
eBay require sellers to offer one safe payment method, either PayPal or merchant facitlity(eftpos).
List with PayPal and then put in the description, "As it is a pick up item, cash on pick up is preferred"
