My lists vs Collections

Why is it I can only add items to my lists sometimes and other times I'm only able to add things to collections?

Collections are terrible to use on some devices and completely nonfunctional on others and I have no interest in people following me.

I just want to use my lists to keep track of what I want to buy...why is it so hard?

I just add lots of items to my watch list that I want to buy.

But even that plays up sometimes.
