    <description>&lt;P&gt;Sin, you can't go wrong with chicken and rice dishes.&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;Spanish rice/chicken&lt;/P&gt;&lt;P&gt;Mustard chicken/rice&lt;/P&gt;&lt;P&gt;Curry chicken/rice&lt;/P&gt;&lt;P&gt;Peanut butter chicken/rice&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;I usually brown onions, and then dump the chicken and other ingredients into a slow cooker. The rice goes in two hours before it's done.&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;You can also steam the rice, and then add it to any chicken dish you cook in the oven, or on the stovetop.&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;Peanut chicken recipe:&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;4 chicken breasts&lt;/P&gt;&lt;P&gt;3TBLs peanut oil &amp;nbsp;(45ml)&lt;/P&gt;&lt;P&gt;Garlic clove&lt;/P&gt;&lt;P&gt;1(5ml) tsp chopped fresh thyme or !/2 dried&amp;nbsp;&lt;/P&gt;&lt;P&gt;1(15ml) Tbls curry powder&lt;/P&gt;&lt;P&gt;Juice of half a lemon&lt;/P&gt;&lt;P&gt;1 onion chopped&lt;/P&gt;&lt;P&gt;2 tomatoes&lt;/P&gt;&lt;P&gt;1 green chili&lt;/P&gt;&lt;P&gt;4(60ml) TBLS peanut butter&lt;/P&gt;&lt;P&gt;3(300g) cups boiling chicken stock&lt;/P&gt;&lt;P&gt;1 !/2 cups uncooked rice&lt;/P&gt;&lt;P&gt;s/p&lt;/P&gt;&lt;P&gt;lemon wedges&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;mix 1 T oil, garlic, thyme, curry powder, and lemon juice. Put cubed, or strips of chicken in merinade in fridge while you prepare the rest.&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;Brown onion in remaining oil. Stick onion, tomatoes, and chili into slow cooker on high.&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;Add the peanut butter slowly to the boiling stock.&amp;nbsp;&lt;/P&gt;&lt;P&gt;Add to slow cooker, and let cook for an hour. I've used canned maters, and even canned diced chilis if I didn't have any fresh stuff on hand. I've even used red bell peppers at times.&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;After an hour, add the chicken. add s/p Cook another hour.&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;Add the rice, and let cook for an hour or two.&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;Squeeze some lemon, and add some fresh parsley if you want.&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;</description>

      <description>&lt;P&gt;Entree means main meal, right?&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;I can't tell you quantities as I do this for two people but I have an easy Chicken and Mushroom pasta sauce...&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;For 2 people&lt;/P&gt;&lt;P&gt;250gm Chicken breast cut into smallish strips or cubed&lt;/P&gt;&lt;P&gt;2 rashers&amp;nbsp;of bacon diced finely&lt;/P&gt;&lt;P&gt;1 medium brown onion diced fonely&lt;/P&gt;&lt;P&gt;1 or 2 cloves garlic squished&lt;/P&gt;&lt;P&gt;4 or 5 fresh open cup mushrooms sliced (if you get the little button ones you need lots more!)&lt;/P&gt;&lt;P&gt;about &amp;nbsp;3/4&amp;nbsp;cup chicken stock&lt;/P&gt;&lt;P&gt;1 small can Light and Easy or Cream for cooking - you could substitute milk or cream I think.&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;Fry the&amp;nbsp;bacon til a little crispy, then add onion and saute til clear, then add garlic and cook for another minute or 2&lt;/P&gt;&lt;P&gt;remove from pan.&lt;/P&gt;&lt;P&gt;Fry chicken til cooked through stirring frequently (not brown and crispy!)&lt;/P&gt;&lt;P&gt;add mushrooms and saute&amp;nbsp;till cooked through&amp;nbsp;&lt;/P&gt;&lt;P&gt;Add the bacon and onion mix, and the stock.&lt;/P&gt;&lt;P&gt;Simmer for a few minutes, then add the Light and easy and bring to a simmer again.&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;Meanwhile cook your past!&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;Serve the sauce spooned over the pasta - grated parmesan cheese on top is optional.&lt;/P&gt;</description>

      <description>&lt;P&gt;Or for the entrees, what about buying some vol au vent cases and filling them up with your own chicken mixture, such a tarragon chicken with cream sauce or a chicken leek and mushroom one would be great.&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;Piri piri chicken is nice and I've got a very nice and easy chicken madras curry.&lt;/P&gt;</description>

      <description>&lt;P&gt;Sure Lurker. &amp;nbsp;This is to serve 4&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;1 tablespoon vegetable oil&lt;/P&gt;&lt;P&gt;600 gms chicken thigh fillets halved (I usually use chicken breast though)&lt;/P&gt;&lt;P&gt;1 brown onion halved and sliced&lt;/P&gt;&lt;P&gt;2 cloves garlic crushed&lt;/P&gt;&lt;P&gt;2cm piece of green ginger peeled, finely grated&lt;/P&gt;&lt;P&gt;1/3 cup Madras curry paste (or less if you don't want it too spicy)&lt;/P&gt;&lt;P&gt;410g can finely chopped tomatoes&amp;nbsp;&lt;/P&gt;&lt;P&gt;1 cup frozen peas&lt;/P&gt;&lt;P&gt;2/3 cup pure cream (I don't usually use as much cos of the calories)&lt;/P&gt;&lt;P&gt;1/2 cup plain yoghurt&lt;/P&gt;&lt;P&gt;80gms baby spinach&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;I usually use a wok but doesn't have to be&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;Heat oil in the wok over medium high heat.&lt;/P&gt;&lt;P&gt;Cook chicken in batches for 2 minutes each side until golden. &amp;nbsp;Transfer to a bowl. &amp;nbsp;Reduce heat to medium.&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;Add onion garlic and ginger to wok. &amp;nbsp;Cook stirring for 5 minutes or until onion has softened. &amp;nbsp;Add curry paste. Cook for 1 minute or until fragrant.&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;Return chicken to wok. &amp;nbsp;Add tomato and 1/2 cup water. &amp;nbsp;Bring to the boil. &amp;nbsp;Reduce heat to low. &amp;nbsp;Simmer partially covered for 30 to 35 minutes or until chicken is cooked through. &amp;nbsp;(Probably not that long for breast).&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;Add peas, cream and yoghurt. &amp;nbsp;Stir to combine. &amp;nbsp;simmer for 5 minutes or until peas are tender. &amp;nbsp;Stir in spinach until just wilted.&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;</description>
