Ebay has automatically charged a Buyer for an Item I was selling marked as Pick Up Only. How can Ebay charge a Buyer a postage charge without knowing the size of the item?

Your items offer local pick up but also show a postage price, check your listing.

I also see you have postage charges on all your current listings and all your completed listings

Both your sold items had postage options. Ebay hasnt done it, you have done it.

You enter what the postage cost is when you list it. Ebay doesnt magically pull out a figure and decide that is the cost.
