I use a variety of kitchen knives.

I've found these to be the best

16' Meat slicing knife for things like whole rumps etc

Trident 12" and 10" Chef's Knife

F Dick long carving knife for things like salmon

Trident 10" carving knife

Trident 8" knife for most general use including slicing tomatoes etc - probasbly use this knife the most

Swibo boning knives

Victrionox paring and turning knives

cheapest vegie peelers I can find, just those plastic ones, but bend the blade out a bit to get a better peel.

nothing beats my Tupperware Can Opener for can openers for general household tins, but I have a big built in bench one fo big cans.

Other stuff too like bread knife (trident) fish knife, filletting knife, cleaver, but don't use those very often

.........................................................

I hand sharpen them on a sharpening stone with water and ajax, sharp enough to use as a razor and keep em sharp inbetween on a magnetic diamond sharpening steel

The sharper your knife is, the safer it is, cos you don't need to apply as much pressure when using it, thus if you slip and cut yourself, the cut is not as bad as it would have been with a dull knife.

.....................................

Washing, I never put my knives in the dishwasher, or use water hotter than necessary to clean them.

Oh, and it is important that the blade goes right to the end of the handle, and then at least thrice rivetted along the handle.

The set I have in the kitchen for the kids and my OH are stored in a knife block, plus the two little ones have a set of Voodoo ones each LOL, so the blades are sort of loose - but mine are stored either in my knife case in leather sheaths (A Saddler makes em for me - made em for my father since forever too) or on a tray all lined up, on a tea towel so they don't slide around. I never let mine rub against each other, sit on a bench, in a drawer, and def not in a block, just cos it would dull them, and they take too darned long to sharpen!

They look new and have never needed a sharpening. About three years. Used all the time.

The Victorinox steak knives are different, dishwasher, used for anything and hubby can use them.

Those voodoo knives are cute.

the second generation ones are better than the first, not 18/10 stainless steel like the first series,

but seriously, you can tell the difference, a whole set of 5 knives costs $100 vs, my chefs knife cost $150, 20 years ago. (so just one knife)

but good enough for the kids and general home use, I use em if I'm too lazy to get mine out, just cos they're on the bench, but as I have good knives, I use them at work or if I'm doing decent work at home iykwim, probably more cos I'm used to my knives.

That is the set I have Stawka and twern't cheap. Love them. They are fabulous.

A friend has them on a magnetic strip on the wall. They just cling, with the blades flush to the wall. But I prefer they hang free. I do not like the thought of clipping them on and off the metal, but they look good like that 🙂

If you want high quality, sharp and with a lifetime warranty you cant go past Wusthof Trident.

They are made in Solingen,Germany. 26 years ago I purchased one identical to the larget one on the recomendation of a friend and the fact that they come with lifetime warranty. Around 4 years ago I dropped it on the kitchen tiles and the tip snapped off about 2 cm from the point so I decided to see how good the warranty was and took them back to the store and showed them the 2 peices and asked about the warranty. The sales lady went to the display cabinet and took out an identical knife and replaced my 26 year old broken one. I was so inpressed that i purchased the smaller one.

The large one has a 16 cm blade and get used for everything. It is always razor sharp and does not need sharpening for around 6 months. I use a very fine diamond dust sharpener which I have had for around 15 years.

They are hand washed after each use and dried.

They live on the counter top 🙂

yeah, easy for the burglers to get too LOLOL

I make the kids put their knives in the cupboard when they're not using them - harder for the bad guys to get when we're not looking!

I have used Trident too.

I like the weight of the Global and handle shape, for me, and the way they look, but the Tridents are a fantastic knife. I road tested them as a friend sold Tridents for a while.

Globals nudged them just on the personal pleasure I had just looking at them 🙂

Hi there poddster 🙂

And Crikey can verify I can slice a mean beef with them (or a finger)
