Tried a quick and easy recipe

1 cup SR flour
1 cup desiccated coconut
1/2 cup sugar
3/4 cup milk

Mix together. 35 - 40 minutes. 170 oC.

I only had the coarser coconut and I used a maple syrup sugar that I had in the cupboard but it seemed okay, Served warm with butter
Probably needed a couple more minutes cooking ( I used my air fryer oven)
But it was quick and easy.

Mmm love coconut- I also put 2 or 3 mashed bananas into this mix and bake it, but use 1/3 cup of sugar instead of 1/2..

Now I want coconut bread...sigh

so what do you put it in to bake? it looks like a small amount.
