You should have a setting on the camera marked AV (or something close to that) That is the setting that lets you control the aperature. Instead of Auto, set the camera to AV and then one of the knobs will change the aperature to what you choose. If you could tell me which model Rebel you have, I can look up the instruction manual and answer questions for you. You should also be able to switch the camera to manual focus and then you can choose where the camera's focus point is.
