Ebay is telling me I have the option to escalate a case that I have open but there is nowhere to do so, there is also no way to contact ebay.

eBay have extended times for sellers in cases due to the delays from Covid-19.

You may need to wait until next week before being able to escalate the case.

And the item may arrive before then.

Same here, there was no option in the case to escalate the case even after the lengthy time frame expiration. Used Live Chat and the bot did the whole thing automatically.

Funny how that option button vanished from the case page eh ?
