Hi, if something sold for approx $AU500.00 what roughly would the Final Value Fee be?

depends on what it is; but ordinary item sold with free listing FVF is 7.9% of the sale value.

And if paid via PayPal, their fee is 2.4% + 30 cents.

So as a rule of thumb, sellers will think of fees as being around 10% with PayPal.
