I’ve sold a watch and posted it well over a week ago and cannot get any communication with the buyer

What communication from the buyer do you need?

Generally once a seller sells something, they don't hear from the buyer

Unless of course there is an issue and the buyer opens a dispute

If it is because your payment is on hold (as it should be) you need to wait the 14-30 days which apply to all new sellers and those who have not sold in a while

Have you fully completed sign up to Managed Payments and been verified to sell?

Also, leaving feedback is not compulsory, but even if the buyer does leave you positive feedback, that alone is unlikely to get your funds released early
