You change the quantity.

Noting that each extra one counts towards your listing/selling limits if you have them.

one at a time so that you don't get zapped for duplicate listings or offers to trade outside of ebay by saying in your listing "I've got 10, let me know how many you want"

You could also offer a second chance offer to someone if more than one person bids on your first item listed/ that will help you to move two with one listing
