how do I change terms on the nonpayment automatic reminder? I think 48 hours to send reminder is too short

I don't think you can change the 2 days but you could turn off the ebay reminder

It is 48 hours or nothing. No idea why you would think 48 hours was too soon, if they haven't paid by the end of 48 hours they get a final warning on day three from me and a dispute opened on day 4 unless of course they ask for an extension before bidding.
