The product I wish to purchase offers no option to request tracking. What happen if it doesn't arrive?

If it is being sent from within Australia and it is a parcel, all come with tracking

you can use the 'contact buyer' to ask them to give you the tracking number if they do not upload one

If it is a letter, they do not have tracking numbers, unless you have paid for registered post

It is no different to what happens if the item is tracked.

You contact the seller to give them a chance to rectify the situation.

If they do not help you open a dispute in ebay or paypal.
