Have you got the tracking number?

Enter it into the AP tracking site http://auspost.com.au/track/

and send her a copy of this to her messages.

As you can prove postage you have paypal seller protection if she open a dispute for item not received, enter that tracking number into the dispute.

If she leaves a neg respond to it saying item was received and signed for as seen at AP.

Then call ebay and ask if they will remove the neg as you have proof it was signed for. They may or may not remove it depending who you talk too.
