I cooked a delicious meal today.
Salmon fillet with skin on and baby potatoes.
Method:
Light your weber using charcoal only no beads. Once the charcoal is well lit place the lid on. Open all 4 vents at the top and almost close the bottom ones. Place the metal plate in the middle (accessory sold separate). Wait about 90 min for the heat to cool. Not too hot otherwise you'll burn the fish. Then put hickory wood in there so that it starts to smoke up.
Rub mashed garlic all over the fillet and a bit olive oil. Salt and pepper to taste if you want.
Wrap the baby potatoes in foil, spice with rosemary and marjoram and place directly on grill. (Do this first).
Then place fillet on metal plate and put the lid on (skin side down). Make sure the upper vents are open. Let it smoke. Cook till skin is nice and crispy and meat easily falls off. If it stops smoking put more hickory in.
I have to say this is probably the best fish ever. The smoky flavors with the potatoes is amazing.
Serve with a green salad. Yum 😉

i take tri tip or sirloin roast,cut it in bitesize pieces,along with redskin potatoes, and zuchhini( or button mushrooms),also cut in bitesize pieces,toss it all in garlic oil,and a bit of salt and black pepper.
then i spread it in a single layer on tinfoil,fold the tinfoil around it and seal it.
that goes straight on the grill,like your potatoes,cover the grill with the top vents open,and cook for about 30 minutes.
this is about an hour after i fire up the grill,so i'd call it medium heat?
you can also cook this in a 350 oven.

Before the war department and I were married, we took my boat up to Lost Creek Lake, and spent the weekend. We had a mini-Weber that we carried on the boat. Take fresh-caught trout, clean them, pack them with sliced tomatoes and wrap them in tin foil with a little beer. Sliced french bread with butter and a Corona to top it off............

a smoky joe! i miss my smoky joe mini weber! i lost that out at cheney lake,during a thunderstorm with 115 mph winds . my antique coleman cooler filled with beer and meat was all that survived ,lol!

"baby" potaoes are very small potaoes which would have been referrred as "seed" potatoes 10 years ago.
not big enough to sell just slab on a new label....errrhhh,
usually when there is a bag of potaoes that are very small it's cheaper....
i know they try to market those "baby" potatoes as someting special but i think they are tasteless and a danger to my fingertips.
