I just cut it into strips about 1cm x 5cm, blanched it for a whisker, lemon juice and seasoning.
got some chilli sauce I'm using to hide the taste of the vegetables to dip it in.

I've cooked it a few times, it's truly a great dish. You can source the annatto seeds and habaneros from Herbies Spices, banana leaves from your local F&V vendor. For me Pork Butt = shoulder, but any cut that cubes up nicely
