Meal ideas please

I have friends who are about to undertake another round of cancer treatments.
I want to try to help out by cooking up a few things they can either use straight away or freeze for later.
Any suggestions?

The same thing, food in small portions, avoiding sugary or spicy or crunchy. So no apples.

Soft foods. So the chicken and beef casseroles should be fine.

Re: Meal ideas please

Lasagne is good for freezing and reheating.

If that appeals to the person getting treatment. His partner will need to eat a good meal as well.

Re: Meal ideas please

I just cooked this tonight for the first time and there are three benefits to it. Firstly it tastes fantastic, secondly there was three litres of stock I will freeze to use with noodles and other easy meals and thirdly it is really easy to digest and easy on the tummy.

I go in for surgery on the 24th and will be useless for at least one week and unable to drive for about two weeks so wanted stuff for the freezer.

It is so easy to cook...

Re: Meal ideas please

If apples are not suitable as a snack you could make an apple sauce....no extra spices or seasonings and as little sugar as possible according to the apples used.   I always have a number of containers of this in the freezer to be used with pork or as a snack.  I found it very handy when my children were sick....very soft and bland but a bit different.

What's happening Catmad?  Nothing serious I hope?

In winter it's brilliant because you can just make lots of soups and stocks and nothing is better when you are not well than dipping a piece of bread into a soup and not having to worry too much.

Good luck to your friend, Lurker.

Re: Meal ideas please

Thanks for all your great ideas.  I have made a Chicken & Sweet Potato Casserole, a Beef Casserole, a Seafood Lasagne and a regular Beef Lasagne.  I'll freeze them overnight and deliver them tomorrow morning.

Thanks again Heart
