Karen, tomatoes freeze. You could be freezing a large supply to make pasta sauce or tomato soup and many other things during winter.
Just dip them in boiling water for a few seconds, skin them, pop them in a plastic bag and freeze. If you have a blender, chop them up a little and they will take up less space in the freezer.
