Daube of Beef Cheeks with Oxtail to be precise.  I started at 8am!  Should be ready in time for dinner Woman Surprised

I hope it's ok if I share a recipe???

 

I was shopping the other day and picked up some dry smoked salmon.  On the back of the pack was a recipe for a salad with potatoes and asparagus.  Hmmmmmm, a bit boring, I thought, but then my imagination took over.  

 

So ...

 

1 chunk dry smoked salmon ($7.50) per person

Baby cos lettuce

Radish (one per person)

Asparagus 1 bunch per two people

Yoghurt

Mint

Bread roll 1 per two people

 

Add about 200 ml yoghurt to a bowl and add mint to taste.  Stir well and put to the side (don't put back in fridge).

 

Lightly cook the asparagus.  I used a frying pan with a little water.  Remove when cooked but still crispy and place in cold water.  

 

Add the salmon to fresh water in the frying pan and reheat gently.  

 

Slice the radish very thinly.  Add to the asparagus and water.

 

Halve the bread rolls and place on plates.  Top with yoghurt mix.

 

Arrange lettuce around bread.

 

Smash the salmon and place on bread.

 

Scatter (drained) chopped asparagus and radish around plate and on top of salmon.

 

Dollop the yoghurt mix over the plate. 

 

It looks pretty, tastes great, and it's probably a little bit good for you 🙂

I'm up to this part

 

Season the cheeks with salt and pepper and brown in a frypan until charry and mean looking. Add to the oxtail braise.

 
and I gotta say, it's looking and smelling pretty good Woman Happy

I cooked that last week..... and then couldn't eat it.... the name kind of put me off?

Tonight it is Corned beef in the slow cooker but the smell is putting me off? I am going out......until it cooks.
