Because eBay is an international community and different countries have different voltage outputs and different electrical socket types, would it be a good idea to have the option for a seller to include these details in their ads as well as making them filter options?

Sellers are able to put any information they want in a product description, [within reason of course] however voltage differs world  wide, so  unlikely a seller will specifically make note just for Australia's 240v.
