I have a lovely recipe for zucchini soup.............but it doesn;t freeze well............it seperates.

Flashie it's probably too similar to you quiches anyway. I just thought it might be something a bit different to do with the zucchinis. maybe not

Do you know if you can get low fat/salt riccotta.

I would be able to use up the spinach with that recipe too.

Icy thanks, I'll try cooking them that way next season. It'll certainly be a better option than hiding them in the compost like I did last time he gave me some lol. I did try peeling and steaming one but it had no taste like Laney said..actually, I think I didn't peel it.
