Karen...........you would love the dish my MIL does then............she puts tomato....zucchini..........onion in a dish to bake...........with bread crumbs over the top.



I make it occassionally here...............but I can not eat it due to my allergy to tomato.



My son loves tomato and onion fried up over fresh beans.

Yum, my Mum used to make a recipe like that. I love zucchinis so much I usually steam them and sprinkle with pepper then eat... Or even more delicious with potato. I like them roasted in Moroccan veggies too.

Flashie, I don't like carrot boiled or steamed unless it is tossed in butter and honey afterwards, but I do love it baked.

Flashie,. I might be wrong. Actually I probably AM wrong, but I used to make fresh ricotta by filtering yoghurt through a stocking hung over a sink overnight. Maybe it's not ricotta... But we used it in spinach triangles etc. You could use low fat yoghurt. It was delicious, especially with herbs mixed in.
