Can a seller pull an auction in the last say 5mins if the item has no bids?

That's odd.  Freddie, I thought you could but what happened to the help pages?  I wanted to confirm or not but they have totally gone!  

That's pretty bad ebay.  I used to know all this stuff but things change.  

I had an item in my watch list, I never bid till the last 20 seconds, the seller pulled the item, she had it listed at a very low price. I contacted her and asked if she would relist it as a buy it now. She contacted me telling me yes she would but she relisted it $40 dearer then she had it listed for.

I found the help pages through the site map.  There used to be a link at the top of most pages.

Well according to that, you can, but not if it has a bid/bids.  If there are no bids then no problem from what I can see.  You can only cancel bids and end early if there are more than 12hours to go.
