what effects how crusty bread ends up?

If it's home made the way you cool it, eg under a tea towel can make it less/more crusty or if you put a glaze on it. 

Steam... vented into the oven before baking... and high temp. 


 


 

These deep philosophical question always do my head in. 😐

I need more bread man !
