hmmm crocs, I've seen them around but none of us here have them
it's a gorgeous day here today 30 degrees, shoppings done and I'm heading over to a friends place for a couple of hours to hang out in her back yard for a catch up and a chat over a few cups of coffee ![]()

well. I'm still cooking dinner though it's a bit late. Have spent the past hour looking for one of the cats outsude. when I saw him he rolled over on his back, naughty thing. Late dinner is OK because OH is stuck in Ballarat ATM & it looks lke it will be a late night

Next on my vegetable overdose list is some kind of pumpkin. They grew from veggie scraps... I think they are those small orange nugget pumpkins, but knowing my luck they'll be paddy melons haha
The mutant tomato vine has started flowering again, but thankfully I now know how to make pasta sauce...yum it's good made with fresh tomatoes.
and I have heaps of eggplants...I'll have to learn how to make Babs ganoush. Oh look, baba autocorrects to Babs. Yes, really lmao

you're so lucky having all those tomatoes.
With those veggies you mentioned, you could make a really nice vegetaran lasagne you know

Savoury muffins are good with zuchinni in them..................and they freeze well.
I often make them and have them for breakfast................2 minutes from frozen inthe microwave.
You can put anything in...............cheese....bacon..........creamed corn.........capsicum.
If you are putting in zuchinni you will need to grate it and squeeze out the moisture...........or your muffins go soggy.
I have a firly big muffin tray.
1 and a half cups of sr flour.
1 egg.
enough milk to mix it..............it should still be a thickish mixture.
whatever you want to flavour them
220-230 degrees................18 minutes usually
makes about a dozen............and freezes well.
and it rather forgiving if you do not measure exactly.
If youi are usinga can of creamed corn you add it before the milk..........(or just use less milk)
I am no use with the eggplant............I hate them............compost!!!

Stuffed eggplant is lovely. I do them with sultanas, pine nuts, garlic, onion, tomato, breadcrumbs, basil and Parmesan and then more Parmesan on top and then baked. You can also put chopped bacon in.

Flashie years ago I used to make a zucchini slice with eggs onion zucchini & cheese.That was yummy too but I've forgotten the recipe
