I love eggplant. The bloke up the road grows veggies from scraps and he has a couple of eggplants...but he hates them....so he gives them to me. Yum!

Eggplant lasagne sounds good...so do the muffins. I don't have a freezer...or a microwave...or a mixer ...but I do have a muffin tin and it has never been used. Surprisingly.

I often do a potato bake with all my veggies, except without potatoes lol. I layer tomatoes, zucchinis and whatever, add a dollop of cream and a bit of cheese.

I am a bit excited because I have 5 ripe lemons on my ;\ tree. I'll have to remember to pick them tomorrow before someone nicks them.

Your potato-less bake is pretty close to how you cook eggplant lasagne.

well, it's been a thundery one today (which I love) but not much rain in it at all

 

it's still pretty dry here in Vic & there was a fire at Healesville today

The weather man lied to me again..............he said rain rain and more rain.

 

Well it did rain.................just not enough.

 

We are having a Monster High Birthday Bash tomorrow in the Flashie house.

 

We have been making rotten fingers.........they look quite good actually.

 

You use scotch finger biscuits ..............break them into fingers...............add half a jelly bean for the fingers nail...................and black icing for the rotten bits.

 

We also make some jelly brains................jelly cups with marshmallow strips.
