The first thing you do is put tomato paste on the pizza base. Otherwise the topping won't stick.
As far as I'm concerned you can put whatever topping like on it after that.
Must have grated or shredded cheese over everything so it doesn't fall off when you lift the slice up to eat it.

I don't really mind the Imams or the Rabbis putting their blessing on it but I can do without it.

I was surprised at how simple they were in Italy ( not heaps of different things on each pizza) but they certainly did have tomato on the base.
The base was freshly handmade so tastes better of course than that from pizza chain shops.

We ate at a pizza restaurant in Rome................ the menu specified white pizza and red pizza.
White had no tomato
red had tomato.

White Pizza. Hmm. Would look a bit anaemic to me.
I guess not everyone can have tomato re allergies or what not.

green (basil), white (mozzarella), and red (tomato)
The café I go to the most, has introduced mini pizzas, which are made by the owner.
The owner was taught how to make the bases by his friend, who was in turn taught by the guy who just won the world's best pizza maker award 🙂
Even third hand, it is pretty darn good.
He uses flour imported from Venice. It does make a difference to the base, to have it made by hand with a flour designed for pizza baking.
