My chicken and vegie soup.

One large onion diced, three carrots, top off a leek sliced (if you have one) Cook these vegies off until just soft. I have silver beet in the garden atm, so I had some chopped including the stalks.

Add water (with Vegeta seasoning) or chicken stock. Toss in one chicken breast (no skin) Let simmer for an hour, shred chicken breast and add back to soup. I don't mind if pasta spirals swell, but if you don't like that the alternative would be some spaghetti, broken into short pieces. I add pasta near the end of cooking. Season.

It's been a wild couple of days in Tassie in more ways than one including the weather ...  but hey, never a dull moment.

It's so good that the little one is feeling much better Flannie, so far so good and here's hoping that she just keeps improving day by day ..... 

Hope our Tassie friends are OK. Certainly sounds like awful weather.

Katy you guys are really in for it, South Island will get it here in NZ, North Island looking ok with just a bit of rain on the weekend.
