what happened was my butcher's freezer unti for her storage lockers went down,so she was calling all of her regular customers and giving the meat away ,per the instructions of her insurance company. i volunteered to take 30# of chicken and turn it into meals that the food bank can use to deliver for the meals on wheels program. the chicken is still frozen in 2 # bags,but i don't have a huge amount of freezer space,so i want to get it cooked and down to the food bank as soon as i can. "

It's already been frozen. Why the hell would a butcher be selling frozen meat?
I'd never buy from a butcher that sold frozen meat but perhaps they have different health regulations in the US.

Quite a few eat in restaurants here where I live, have a take-away menu as well. That is food sold to be taken home...restarauant has no control over that once it leaves there premises.
Yes, restaurants that do takeaway are different. Stawka mentioned them...the ones that don't do takeaway in Vic don't generally let you take home the leftovers. One restaurant I know of that does, puts a disclaimer label on the lid. Something like they have no responsibility for the food once it leaves their premises. In Vic, after a huge food poisoning one Christmas at a pub/hotel, the law was changed to not let food poisoned people sue the establishment. The place would be liable to fines and restrictions, but not being sued. That's not right if you have hospital bills from a bad meal. I think Stawka's in Vic too.

The central market in Italy? I bought a fresh turkey like that in the supermarket but was assured that it hadn't been frozen. It was just the blast chilling. Not sure whether I believed the butcher but it was going to be cooked anyway and not frozen at home.

Exactly, it would have been the blast chilling. Not the same as being frozen (apparently). If they were chicken breast or chicken drumsticks then yes, they have been frozen but not if it was whole chickens.

What is the law on Doggy Bags?
There are no laws that prevent restaurants and cafes from giving customers doggy bags however, food businesses can minimise risks by:
Having a procedure in their Food Safety Program for dealing with doggy bags.
Having a leaflet or messages on menus explaining the risks of doggy bags to consumers; and
Seeking advice from insurers.

Sin, you can't go wrong with chicken and rice dishes.
Spanish rice/chicken
Mustard chicken/rice
Curry chicken/rice
Peanut butter chicken/rice
I usually brown onions, and then dump the chicken and other ingredients into a slow cooker. The rice goes in two hours before it's done.
You can also steam the rice, and then add it to any chicken dish you cook in the oven, or on the stovetop.
Peanut chicken recipe:
4 chicken breasts
3TBLs peanut oil (45ml)
Garlic clove
1(5ml) tsp chopped fresh thyme or !/2 dried
1(15ml) Tbls curry powder
Juice of half a lemon
1 onion chopped
2 tomatoes
1 green chili
4(60ml) TBLS peanut butter
3(300g) cups boiling chicken stock
1 !/2 cups uncooked rice
s/p
lemon wedges
mix 1 T oil, garlic, thyme, curry powder, and lemon juice. Put cubed, or strips of chicken in merinade in fridge while you prepare the rest.
Brown onion in remaining oil. Stick onion, tomatoes, and chili into slow cooker on high.
Add the peanut butter slowly to the boiling stock.
Add to slow cooker, and let cook for an hour. I've used canned maters, and even canned diced chilis if I didn't have any fresh stuff on hand. I've even used red bell peppers at times.
After an hour, add the chicken. add s/p Cook another hour.
Add the rice, and let cook for an hour or two.
Squeeze some lemon, and add some fresh parsley if you want.

Do you have big pots to cook in? How about some Chile made with the chicken? You can either grind it up if you have a meat grinder, or dice it up.
And you can check out allrecipesdotcom. Plenty of ideas there.

Good idea also. It could be sliced up for fajitas or cold for a wrap also after it was roasted.
Someone said you can't refreeze frozen meat after it was defrosted. You can as long as it is cooked before refreezing. The only thing I wouldn't do that with is seafood, fish, shrimp, etc.
You have to be real careful in some of our supermarkets that sell "fresh" seafood. It looks real pretty and nice. But they don't tell you they opened up the frozen bags and laid it out on the ice. My sister got very sick from that.
