But who went into the Professor's computer and then reported the contents to the New Matilda? Surely not the University's computer administrator.

YES it sure does.... PRIVATE emails just suddenly get released to the media....
What people say or write in private should be private on a private phone or computer. I don't condone what he wrote, but everyone should be entitled to have a humourous/stupid/childlike/private side
Not in this day and age of outrage at everything.... A sense of humour or private emails or chats are not allowed
to an otherwise staid existence.

It was a work email account, not his private account.

In the meantime Barry Spurr has been exposed.
"Education Minister Christopher Pyne condemned the comments.
"The minister utterly rejects and finds repugnant the denigration of any minority on the basis of their sex, race, sexual orientation or beliefs," a spokesman said."
"The university takes the allegations very seriously ... Racist, sexist or offensive language is not tolerated at the University of Sydney."

Perhaps one of these recipients passed on their copy to NM?

That doesn't mean his email account (WORK) was hacked.

Obviously the New Matilda have an agenda in exposing ppl by hacking into computers. Hacking is illegal. The New Matilda seem to find this fine detail irrelevant.
Having said that, ppl in high places need to be aware of such hackers and refrain from putting their innermost thoughts into easily accessed correspondence.
