maybe the business is 'short of funds' and paid you by cheque to fulfill it's obligation and so that you couldn't cash it until funds came in.

By cash? That seems unuasul to me. I thought all offical employers paid by check so they could keep track, or the government could keep track of one's income. Anymore, many companys have stoped handing out checks in favor of direct deposit. That didn't set right with me, because one could not easally see if they were paid for all hours worked, overtime and such, without getting a balance from their bank. Also it requires one to have a bank account and doing the math.
