only one problem with that. I have never sucessfully made fried rice. It either goes like glue or ball-bearings.

 

I could buy a large fried rice from the local Chinese and stir fry in the chicken and some other bits and pieces.

 

Unless someone wants to show me how to make it from scratch.

Get the right sort of rice, cook it in the microwave and cool it down before frying.  Never fails.  I like Jasmin rice.  

Boil some rice for about 9 minutes the night before or early in the day and rinse it really well.  Spread it as thin as possible in a baking dish and refrigerate to dry it out.

 

Then when you make the fried rice, pre-fry a couple of whisked eggs, remove from the wok and chop up.

 

Use Peanut oil or other oil that can take high heat.

 

Finely dice some garlic and ginger and add it to the wok with sliced spring onion, very finely sliced mushroom, left over chicken and whatever else you want to include. 

 

Add some sesame oil but not too much as it is very strong and add the rice and cooked egg.

 

As you are stir-frying it quickly, sprinkle soy sauce until you get the right flavour for you.

 

A messy meal to make but everyone likes good fried rice.

microwaved instead of boiled.

 

I do it like you Joono.

I usually boil the rice in the morning wash it well and put in the fridge to dry out.

 

I never have trouble with rice and wonder why people buy rice cookers, you just need a pot

I do stir through some low salt soya sauce just before I take the rice out of the pan.

 

You can also nuke a few veggies and throw them in.

why do you have to rinse it?
