sausages should be cooked slowly on a low heat, without pricking
sausages in natural skins will curl as the skin wants to take it's natural shape
fake skins(collogen) will remain straight

Spot on! And turned frequently to prevent any curling. My wife says she just loves my straight sausage...
The ones in the pan - get your mind out of the gutter!

News Flash!
A Sausage was spotted casing my house yesterday. Identified by his organ donor card as Mr Jones with links to the skin head nation he was overheard challenging the PD...."come on and fight me.... no hands, are you chicken?" A real animal the police responded. He was boiling mad as he was led into the patty wagon.
The DA characterized the defendant as a seasoned criminal with a lengthy rap sheet. "These types can't be cured". The judge noted, "he was tough to stomach!". Bail was denied and he was put on ice.

Prick sausages? never and if they curl or bend who cares.
If you buy good quality then you will have experienced the rebirth of the gourmet sausage and all its flavour.
Talking about pricking sausages seems to me that they are still in the sausage past when they wern't that good but these days they are terrifc and cost up to $14 kilo at my butcher.
If you want to continue to buy cheap sausages then curry them but only if they are Pork.

Take the plastic off and you can make them into any shape. (Fun shapes for children for example). Good sausages do not lose their juices or flavour.

Certainly a vast difference in quality (the ingredients used) between cheap supermarket sausages and more expensive ones.
I bought a bbq'ed sausage in a sour dough roll from a "German Hut' at a local market a few months ago, that was very tasty.
