Sometimes the difference is in the cut of the chips and their size.  I've bought homebrand chips that were mostly the end curved bits and even smaller.  It's hard to find a place (or a supermarlet packet) that has genuine good sized and shaped chips.

 

Fish and chip shops that don't make their own have the option  buying them in different sizes but long chunky ones are the most expensive so you rarely see them.  There used to be a roast chicken place I liked that also sold the good chips (in fact the owner was the person who told me about size options).  His chips were fantastic.  Unfortunately he retired and sold the business.....and the new owner bought the cheaper version - lots of curved edges and not a long chip in the bag.  There may have been other factors of course but ultimately he didn't last long and now the shop has been empty for over a year.


That's right.  The quality control for the actual quality of the potato has gone along with the quality control too of  the cut of the potato.

 

"Buying direct from the  farmer"   - Some of the "middle men" in the process from paddock to plate have lost their jobs.

The shoestring homebrand ones are usually the Maccas ones that are too short or too long for Maccas, so you end up with lots of long and lots of short shoestrings.

 

And you're right the top of the line get the most uniformity.  If I have chips they come cooked from a shop or I cut and cook my own.  I'm not a fan of frozen ones, unless they're fresh from the quality control lab.  I think that's because they haven't become frozen solid yet.
