Karen and miss - very happy anniversaries to you:-p
Thanks for asking libby - I am now the official BEST baked apple cooker in Wollongong! LOL - It all worked out OK, much to my relief;-)
I promised recipe - so here it is - not fancy...........
Use medium sized or bigger Granny Smith apples
Wash, core and slit skin around the middle
Stuff core hole hard with raisins
Make mixture of butter and brown sugar - mostly sugar - put about half teaspoon like cap over top of raisins/cored hole
Bake in 180degree C oven - about 45 mins - 1 hr - till soft but not split.
Serve with ice cream or cream or custard and sauce - consisting of brown sugar, apple juice, lemon rind, lemon juice and rum - reduced to syrup.
I think it was the rum fooled 'em. LOL:^O
