Well it wasn't totally baked. It was just added to the baking dish for the last half hour. It was the vac sealed baby beets that I bought in Coles. They are already cooked but they aren't like the pickled type that you get in tins.
I have roasted baby beetroot from fresh before and it is really nice. To be honest, I can't remember whether I peeled it or not but it didn't colour the other things.

I sometimes roast beetroot........wrap it in foil first..............and when it is cooked jut put a bit of sour cream on the top yummy.
It is amazing the difference in taste from fresh beetroot to canned............fresh has much more of an earthy taste.
Iza...........I learnt the hard way to make sure all my family comments are generic and non identifying................my family is a huge part of my life too (as is for many of us).

I feel really sorry now that I threw all my home grown beetroot to the chooks lol. I couldn't work out how to cook them... and when I tried, they were yuk. I should have asked here first.

I agree with you about the taste of fresh beetroot Flashie. Once I first cooked it myself, could never go back to the tinned stuff.
When you roast your beetroot, do you peel it first or roast it with the skin on? The sour cream would give it a 'borscht' type flavour - yummmmmm.
