I find it remarkable that the seller could have posted the item 5 minutes after I cancelled the order.
After being both a seller and buyer for over 20 years with eBay this sort of customer service is why I will move to Amazon for all my future online purchases .

Further information I have found both eBay and PayPal are now completely void of any customer service.

So long
If you have been using eBay as a buyer and a seller, you would know how the basics work
eBay makes an item as 'posted' as soon as a label is generated
You have no way of knowing if the seller was online and generated a label as soon as they saw it sold
The buyer cannot cancel, only the seller and they are not obligated to do so
Better still, don't buy something if you are going to try to cancel after 5 minutes, wasting the seller's time and possibly costing them a genuine sale
eBay are not going to notice if you leave or not due to having one issue, totally of your own making

How did you manage to cancel the order - when only the seller is able - but isn't obligated to do so. ??

Even this is still saying it's a cancel request - and must be accepted by the seller. ?

That's correct, and that is my complaint, the seller was informed that it was an error immediately and still they refused to cancel the order.
As a seller it was always my custom to offer customer service, that (Customer Service) unfortunately seems to be a thing of the past which comon to all aspects of service these days and not just eBay.

So was that an aoplogy for saying you cancelled the order within 5 minutes - but didn't realise it was at the seller's discretion. ??
