What do you do when you go away for a week and cannot post anything during that time?

its called relaxing, only joking or am i.. just put your goods on holiday mode. thats if its a store

With the holiday settings I think there is the option to hide your listings completely, or keep them active and a message is sent to buyers and a little note above the listings.
I would be incline to hide the listings completely as buyers do not seem to read anything and blame the seller.

As yours is not a store and you have active listings you need to end the listings and relist once you return.
You can keep them active but risk neg feedback and disputes when the buyers do not get the items in the time frame ebay say it should arrive.

Can you set the quantity to zero for each listing for non stores and keep them active as I can (I have a store though)

I think there is a setting in the site preferences to allow for zero quantity listings that don't just end.

Dylan's suggestion to take the items off list sounds reasonable, I agree that people do not read notes.

I go away a lot and just put holiday mode on. When someone purchases something I email them and say something like....
"as per the note in the listing, im away til blah blah your item wont be posted til blah blah. If you have purchased in error and this delay is too long for you please let me know as I am happy to cancel the sale during this time"
Never had an issue (and never had to cancel a sale).
