Anyone know how to generate a report on how many listings you created, and on which dates, so you can see things over time. Kind of like the chart on the seller hub for sales over a certain period, but instead for listings created.

Not me. I keep my own records. I would never rely on eBay for core business processes.
You have 71 extant listings, hardly a stretch to record.
