I think this looks pretty cool, but without the anemic looking white puddle of sauce. I reckon the egg yolk would be enough.
Imagine just slicing the perfectly cooked poached egg opened and the rich dark yellow yolk just oozing down over the food to coat it. That would look and taste amazing I reckon.
