I think this looks pretty cool, but without the anemic looking white puddle of sauce. I reckon the egg yolk would be enough.
Imagine just slicing the perfectly cooked poached egg opened and the rich dark yellow yolk just oozing down over the food to coat it. That would look and taste amazing I reckon.
Looks a bit rich, without being accused of soliciting if you take a look at my store you will see what kinds of things people do with eggs.
