Crikey, the practices I have seen in kitchens in restaurants, at times, are not as they were (or should have been) trained.

 

that is not good for them, but a lot have rushed, inexperienced staff.

 

I know this, as I have been in these kitchens.

 

I do not make enough stock for spillage, or encroachment against a chinois in a sturdy, stable stand.

 

neither am I splashed, as I take care with all hot substances, as all people should. Common sense, of course. But thank you for your concern.

It doesn't just have great bar staff, but a really nice atmosphere 🙂
