Hi, Does anyone know how to make shortcake, like Balfours use for their apricot slices?
Doesn't seem to much on the net...mostly strawberry shortcake, or other recipes nothing like what I'm looking for.
Hubby and I are dying for a Balfours apricot slice but we live in Qld, so I promised him I would try and make some if I can get close enough to the real thing.

The best way i found with cooking - anything - was once i stopped worrying if it turn out a failure,
I was willing to give anything a go.
So my suggestion would be to try a few different recipes in small quantities, all at the same time and see what works.
Sweets is one thing I would like to do more cooking of.

A freshly made apricot slice with homemade shortcake will probably taste better than a Balfours one (even though you think they are good).

This one looks like an easy recipe. You could just leave out the apple and use only apricot if you like. I've never made it.

Here is a recipe that you can compare with any others you find
2 cups standard plain flour
1 teaspoon of baking powder
125 g butter
1/4 cup sugar
1 egg, beaten
1 to 2 tablespoons of milk
Sift flour and baking powder into a bowl.
Cut in butter until it resembles coarse breadcrumbs
Mix in sugar and the egg
Add sufficient milk to form a firm dough.
Knead until smooth.
Divide dough in half and roll out each piece to fit a 22cm square cake tin. Place one piece of dough in tin and spread apple over it.
Lightly press remaining dough on top.
Bake at 180C for 25 minutes
When cold sprinkle with icing sugar and cut into squares
Makes 16

What are you going to use for the apricot filling? Dried apricots?
