Kosher describes what is ‘fit and proper’ for people of the Jewish faith to consume. Kosher food laws are based on interpretation of the Bible and the Torah, the Judaic scriptures, and set out a range of beverages and foods (including meat) that are acceptable to drink and eat.
Halal describes what is lawful for Muslims to eat. Halal food laws are based on interpretation of the Quran, the Muslim scripture, and set out the range of beverages and foods (including meat) that are acceptable for Muslims to eat.

my work kills 4000 animals everyday HALAL every single one is stunned first.
i will repeat once again ritual slaughter is where the animal is not stunned first. and is extremely rare and highly monitored.
we sign no non disclosure documents with any certifiers

these 15 abattoirs of which you speak are most likely 1 man shows.
