Hi Freddie sounds like you have a difficult neighbour.........i did have a great sponge receipe but cant find it sorry...... although this one on the net is very like the one i used to make........i did sift the flour 3 times and then you fold in the flour with a wooden spoon,

Prepare tins...spray and line bottom with baking powder.
Separate 4 eggs....beat whites till stiff
Dissolve 6oz Sugar in 2 tblsp boiling water [as much as possible ]
Add slowly to whites beating fast [ 'till no more gritty sound]
Add yolks one at a time still beating fast
Add slowly with a spoon, folding in gently:
6oz cornflour
1 dsp flour or cocoa
1 tsp Baking pdr previously mixed
Bake in 2 tins for 20 mins at 350 deg
Switch oven off for 2 mins
Open door for 2 mins

Never fail sponge receipe......but sift the flour three times that is the secret

FIELDER’S SPONGE SANDWICH
3 eggs
4 tbsp sugar
2½ heaped tbsp cornflour
1 dssp plain flour
1 tsp baking powder

Beat the egg whites to a stiff froth and add the egg yolks. Add the sugar gradually and beat until stiff and the sugar has dissolved. Add the sifted cornflour, flour and baking powder. Place the mixture into 20cm (8”) sandwich tins.
Bake in a moderately hot oven, 180°C (350°F) gas, 215°C (425°F) for 15 minutes.

Well I thought the interview went well I answered all the questions gave examples and I've been doing the job for 8 months know the database so hopefully all is good. They wear a Uniform there very swish I look like a plus size Trolly dolley, lol. I'm not getting my hopes up I made the mistake in the past of thinking every job I went for I was in like Flynn only to be let down and very dissappointed. I have another interview next Monday same job just different people but its for aq Not For Profit Organisation like I'm in now 🙂

17 months is a beautiful age Miss they have afternoon naps, lol. Wish mine was 18 months again, lol.

I bought Marley and Me yesterday read the book and was so sad so looking forward to the film even though I dont like the blonde haired chap in it, lol.'

Thanks for the recipe's Jen, the Fielders Cournflour recipe is the one i'm going to try today, strawberries are $9.99 a punnet, so kiwi fruit will be the fruit used.

Hi Girls.....have been busy the last few days. Had doctors and physio appointments. All are very, very happy with my progress.

Freddie, I got 12, 500g punnets of strawberries yesterday for $6.00. I am going to make jam today. They are lovely and plump and very sweet.

JVH....I hope the water recedes so you can get to see Mum. It must have been worrying when you got the call to say they might have to evacuate.

To all the others that live in the rain affected areas, I hope you are managing. We need the rain here in Melbourne, but never seem to get any, we only get the fires.

Hubby ended up getting me my new phone, and let me tell you I thing I need a licence to use it. At least if I am out I can keep an eye on all of you:^O
