the buyer agreed to and then disregarded the sellers "term and condition" of the sale... they could have moved on to another listing that did not have that term and condition but chose not to
.... you need to communicate this to ebay..... firmly .. do not take NO for an answer.

you need to make it clear it was an original term of the auction not to post until payment had cleared to your bank account by sending ebay copies of the term in your item decription and the buyers emails stating it was not good enough dated after the sale.
The time for the buyer to email and query was before they committed to the purchase of the item as per the contract of sale

... there is not much more the buyer can do to you they have already negged. I would block their username on your special list.
I agree with the others in that you are much better stating a 5 or 7 day handling time with no reason why.....
