Firt I have t say I have no problems with people posting in capitals. It actually makes it easier to read for those like myself who are getting older and dont have the best eyesight anymore.
As for keeping calm when dealing with paypal staff. I can garantee that wont help you even a little. Its also very hard to do when confronted by the brick wall reasoning they employ!
We all know Ebay and paypal will use any excuse to support a buyer above a seller regardless of right and wrong. They ask you to take tictures, obtain evidence, get letters etc etc. This is generally just a stalling tactic and they assume that by imposing so many conditions etc you will simply give up.
I had a customer buy used to buy Schleich figures from me. Every 2nd or 3rd order they would claim an item was missing. So I would replace or refund. I soon worked out they were a sometimes seller and were scamming me. So when I next dent an order I triple checked it and low and behold they claimed one item was missing and one was damaged. The entire order was worth about $60 and the two items they referred to were worth $10 together. They claimed for half the orderat $30. Ebay had then return the damaged item. It was not damaged and it was not the exact same item i sent. It was an earlier release of the same item which had no tag attached, was a different colour and showed signs of play-wear. Payal found in their favour and gave them back the $30 even though their claim should have been for $10 and it was a false claim to boot.
