We do the same. Send an email to say Thank you for your purchase. We've received notification from PayPal that you are paying by eCheque etc etc with the estimated clearance date and that we'll email once payment is received and their item posted.

Keep an eye on the dollar sign though because I think it actually updates to the date the payment cleared. Haven't had an eCheque lately so I can't confirm that.
