Exactly what are you worried about?
That they go home and open an "item not received" dispute with ebay? es they can do this, but there is no paypal coverage for items which are picked up in person. While it's a hassle, and ebay customer service are not helpful, you only need quote their own rules back to them.
Are you concerned they'll cite an unauthorised transaction with their bank and get a refund this way? Well yes, that can happrn too, but it is so unlikely, you'd have more chance of being hit by lightening, despite some posters on the board vowing this is a real poosibility. After 10 years on ebay and over 3000 transactions it has NEVER happened and I take paypal for pick ups all the time. If it makes you feel better by all means get them to sign a copy of the listing page stating "paid with paypal and collected in person - signed by John Smith and the date, and file it away and then you have it to use if you need to.
It's extremely rare that these incidents happen. Try and make your rules for the 99% of sales which happen without incident to good honest people, and put 1% of your effort into the 1% of people who might try something on. That is, protect yourself, but it need not take over your life.
