cut taties and boil till just tender..drain straight away.  I add chopped red onion, parsley, mint, bought potatoe salad dressing and add chopped boiled eggs and a healthy dash of thickened cream. make it the day before use.  nummo

I leave the skin on and cube them first.

We've mixed it up over the years but my potato salad at the moment  has spring onion, a tiny bit of dill pickle, half a pink lady apple with some skin on for colour plus salt, pepper and mayo. 

 

I always cube them first also - it is easier.

Chat potatoes boiled until tenderish and then quartered

 

Heaps of S & W whole egg mayo

 

Lots of freshly chopped dill

 

Crunchy bacon sprinkled over top

 

S & P to taste

That really does sound quite good Imastawka.  I will try it out some time.

With the little chats, I sometimes just boil them and pour over a mixture of melted butter, crushed garlic and chopped parsley (or mint).
